Tempeh Pomodoro

8oz tempeh

3 ripe tomatoes

2 Tablespoons

1-2 Tablespoons safflower oil (substitute: avocado oil or ghee)



  1. Slice tempeh into bite size pieces.
  2. Dice tomatoes.
  3. Warm oil in a pan over medium-high heat
  4. Brown tempeh on both sides
  5. Add tomatoes and cook until there is little or no liquid left (3-5 minutes)
  6. Add tamari and simmer for 2-3 minutes
